Ingredients
  1. 8 oz macaroni
  2. 1 head cauliflower, broken into florets (about 1 ½ pound)
  3. 2 tbsp oil
  4. 2 tbsp plain flour
  5. 1 ¾ cups milk
  6. 2 oz cheddar, grated
  7. 2 oz Pecorino cheese, grated
Instructions
  1. Preheat oven to 400°F.
  2. Add the macaroni to a large pan of boiling water and cook following the instructions on the packaging.
  3. Add the cauliflower florets and chopped cauliflower leaves for the final 5 minutes.
  4. Heat the oil in a pan, then stir in the flour and cook for 2 minutes.
  5. Remove from the heat and gradually stir in the milk.
  6. Add the cheese and cook until the sauce boils and thickens stirring constantly then boil 1 minute further.
  7. Drain the macaroni and cauliflower and stir into the cheese sauce.
  8. Transfer the mixture to a baking dish and bake for 25 minutes or until golden and bubbling.
  9. Serve with your favorite salad.
