Very often when it comes to food we get into routine, especially when it comes to breakfast, bowl of our favorite cereal or whatever we like the most and that’s it from day to day.

What if I tell you that we can replace a boring bowl of cereal with decadent breakfast cereal cookies?  How does that sound to you ? 🙂

Making Cereal Cookies

Cookie Crisp is one of my favorite cereals. Cookie Crisp were originally designed to recreate the taste of chocolate chip cookies and milk, though tasty, they leave a lot of room for improvement. Don’t get me wrong served in a bowl with just milk, they are delicious, but with a little effort we can turn them into something fantastic. So if your favorite cereals doesn’t fit the best breakfast bill anymore, you can always make breakfast cookies with them.

Can we eat cookies for breakfast ?
The breakfast cookie offers delicious start to the morning. I especially love these no-bake cookies because the Cookie Crisp go so well with the rest of ingredients. With just 6 simple ingredients you can make a cookie that tastes great. They are the perfect grab and go breakfast and they will satisfy your sweet tooth without wrecking your diet. These cookies are full of good for you ingredients like oats, flax seeds and peanut butter. By adding flax seed and peanut butter we are making them to be full of protein, fiber, Omega-3 essential fatty acids, vitamins, minerals, antioxidants. Honey is added for texture and to make them sweeter and the dark chocolate is added simply to make them irresistible and perfect for a quick chocolate fix! You can leave out the chocolate if you aren’t a chocolate for breakfast kind of person, but I say go for it. Live on the edge a little. This way, we have created a delicious snack that is full of healthy ingredients convenient to take with you and is a refreshing twist on the good old cereal. These breakfast cereal cookies are so easy to make and I love the simplicity of this recipe. You probably have all of the ingredients in your pantry right now and you don’t have to turn on the oven.

How to make breakfast cookies?
Just mix all the ingredients.

Drop single tablespoon full of mixture  onto the working board  and  flatten the cookies.

Flatten Cookies

Resist your urge to eat them right away. 🙂  Refrigerate the cookies for at least half  hour before serving.

I’m sure even your mom would give you permission to eat them for breakfast!  You can keep a batch in the freezer so you can enjoy a cookie any time or the day. I’m sure you’ll love these no bake breakfast cookies with peanut butter, chocolate, oats, flax seeds and your favorite cereals. They come together in a flash, and there’s no turning on the oven!

I know that no bake cookies are ideal for summer and warmer weather but I think Santa won’t mind if you leave him some of these cookies and I’m pretty sure these cookies will be a new holiday staple!

Ingredients
  1. ½ cup Cookie crisp
  2. ¼ cup flax seed
  3. 1 ½ tbsp honey
  4. 1 ½ oz dark chocolate
  5. ½ cup rolled oats
  6. ¼ cup peanut butter
For decoration
  1. 18 Cookie Crisp
Instructions
  1. Melt the chocolate and honey in a heatproof bowl placed over a pan of gently simmering water. Remove from the heat and add in the peanut butter. Mix well until combine and set aside.
  2. Put the rolled oats, flax seeds and Cookie crisp in a food processor and pulse a few time until finely ground.
  3. Mix chocolate mixture with ground cereal until combine.
  4. Drop single tablespoonfuls of mixture onto the working board and flatten the cookies.
  5. Press in the center one Cookie crisp for decoration.
  6. Refrigerate the cookies for at least half hour before serving.
