Frog-Eye Salad, the sweet pasta salad made with ancini de pepe–tiny round pasta salad is perfect for parties and potlucks because it’s easy to make, full of familiar ingredients that kids and adults already love, and it can be quickly prepped ahead of time, so you always have time to fit it into your schedule no matter how busy (or lazy!) the summertime gets!

So Easy To Make!

The hardest this recipe gets is a quick boiling of the pasta. Because the ancini de pepe is such a tiny shape and size, you’ll want a fine-mesh strainer for draining. Just boil the pasta according to package directions, then drain the water from the pasta with a fine-mesh strainer.

Once drained, the pasta should be cooled slightly, then tossed with your favorite mix of ingredients. There’s a whole list of optional mix-in’s listed in the recipe below!

Pick Your Mix-In’s

Whipped topping and powdered pudding mix make a rich, custard-like sauce for the pasta. Then, stir it all together with any of your favorite ingredients from the recipe list. Any combination will work, and feel free to mix in other sweet favorites. You can even make an ambrosia-flavored salad by swapping in pistachio pudding powder, and using green maraschino cherries. This salad is so versatile and fun similar to Sonic salads that you might have tried before!

  1. 1 box acini de pepe pasta, cooked according to package directions
  2. 2 (8 ounce) whipped topping
  3. 1 (5.9 ounces) box instant vanilla pudding powder1 (15 ounce) can fruit cocktail or diced pineapple, undrained
  4. 1 (15 ounce) can mandarin oranged, drained
  5. 1/2 cup maraschino cherries, halved
  6. 1/2 cup chopped pecans
  7. 1 cup miniature marshmallows (optional)
