Do you have leftovers?  Can’t think about what to do with that left over roast?  Give this recipe a try.  It’s great if you have left over meat from a holiday meal or Sunday dinner.  With Easter comes lots of left overs for my family.  And one of those left overs is our $50 standing rib roast.  Rather than letting that tender, EXPENSIVE piece of meat go to waste we save it and make a bunch of different recipes with it.  One of them being our steak and caramelized onion quesadillas.   Another one the kids will be sure to enjoy!

Prep time: 15 minutes

Cooking time: 25 minutes

 

Ingredients:

1/2 LB prime rib steak or other tender steak

1 large white onion

1/2 Cup of Teriyaki sauce

1 TBSP of Worcestershire sauce

2 TBSP Butter or margarine

3 TSP of olive oil

2 1/2 Cups of smoked Gouda cheese

3 Burrito tortilla shells

Pinch of salt

Pinch of pepper

 

Directions:

Lightly salt and pepper steak.  Cook steak to medium rare (steak will finish cooking on the stove).  Let steak rest.

While steak is resting slice onion as thin as possible.

In medium skillet sauté onions and butter over medium heat.  Cook onions until translucent.  While onions are cooking slice steak into bite size pieces.

  Once onions are soft and translucent add teriyaki and worcestershire sauce.  Cook for an additional 5 minutes.  

Add steak and sauté until steak is cooked thoroughly about another 5-7 minutes.  Be sure to divide mixture into three equal parts for the 3 quesadillas.

Add meat and simmer with sauce

In a separate skillet heat one tsp of oil.  Once the oil is hot add one tortilla shell.  Spoon onion and steak mixture onto tortilla and spread evenly.  Sprinkle cheese on top of mixture.  Place another tortilla on top and  gently press down with spatula.  Cook for 2-3 minutes or until golden brown and then flip and cook for another 2-3 minutes or until golden brown.

Cut quesadilla into 8 slices (like a pizza).  ENJOY!

Tips and Tricks:

You can serve this with fresh guacamole.

Our guacamole recipe:

Ingredients:

2 avocados

1 medium size tomato chopped

2 TBSP of cilantro finely chopped

1 lime squeezed

dash of salt and pepper

Directions:

Mash up avocado with a fork (you can leave some chunks)

add tomato and cilantro and mix.

Add lime juice and salt and pepper

Serve alongside the Steak and Caramelized onion quesadillas.

Other tips and tricks:

Add a tsp of sugar to the onions when they are in the pan.  This will help the caramelization process and give a bit more sweetness to the onions.

You can swap out the flour tortillas and use wheat for a healthier and lighter option.
