HAPPY EASTER!  What a great way to celebrate!  These are such a great idea for Easter Parties of family gatherings.  The kids will absolutely love them!  And they can even help make these little treats.  They are easy and fun for the entire family.

Cook time:20 minsIngredients:

  • 3 Cups of Rice Krispy (Krispies) cereal
  • 1 Bag of the large marshmallows
  • 3 TBSP of butter or margarine
  • 2 TSP of vanilla extract
  • 1 bag of white chocolate chips
  • 3 TBSP of cream or half and half
  • Red and green food coloring

Directions:

Line a baking sheet with parchment paper and rub with 1 TBSP of butter and set aside.

In a heavy bottomed pan melt 2 TBSP of butter on medium heat.  Once the butter is melted add the marshmallows and be sure to keep stirring to ensure that they do not burn.  Once the marshmallows have been completely melted add the rice krispies.  Stir until they are all coated with marshmallows. 

Move the rice krispy marshmallow mixture to the baking sheet covered with parchment paper.  Spread out the mixture quickly.  Let the mixture cool.

Once the mixture is cool.  Divide the mixture into 1/2 cup pieces.  Mold each piece into an egg shape.  Once all of the mixture has been formed into eggs set them aside.

Fill a medium saucepan half way with water and keep on med heat.  Place a large bowl on top to fit snuggly in pan once the water is getting warmer.(double boiler) Keep your flame on med low to be sure that the water doesn’t boil.  Once the water is warm fill the bowl thats sitting atop of the pan with the white chocolate chips.  Once the chips begin to melt add the cream.  Keep stirring until the chips are completely melted.  Once melted keep the flame on the double boiler to keep the chips soft and melted.

Dip each egg in the white chocolate and let excess drip off.  place on a cooling rack to let any excess chocolate run off.  repeat with each egg.  Let the chocolate harden on the eggs.

Let the chocolate harden on the eggs.

While the eggs are drying and cooling separate 1/2 cup of white chocolate into two separate cups 1/4 cupid each.  Add one drop of red to one and one drop of green to the other.  Stir in food coloring well.  It will make a pastel green and pink to drizzle onto the eggs.

Once the eggs have cooled from being dipped drizzle each color onto the eggs.

Tips and Tricks:

To keep the rice ksrispies from sticking to the spoon when your spreading it out, spread butter on the spoon/spatula.

Add food coloring to the marshmallows when they are being melted to make them more colorful.

You can use other cereals as well such as corn flakes, fruity or chocolate pebbles.

To make a perfect egg shape place the rice krispy mixture (once cooled) into a plastic egg.

You can also substitute marshmallows for caramel.
