 Black Bean Brownies

When my friend moved to Tokyo a few years ago, he started sending me packages with some totally unknown and new food for me. In the first package he sent me some sort of cookies , white soft balls with some incredible tasty red filling. And I was amazed.

When I asked him what was the filling he told me it was red beans. I thought he lost something in translation so I asked my friend Google about it. 🙂 But Google gave me the same answer. Beans in a dessert? Oh my, I never thought of that. In my search I stumbled upon black bean brownies and I was intrigued. Black beans can add elegant flair to many dishes, but to brownies? At that time I regularly ate black beans in omelets, chili, dips and salads but never in dessert. I know, black bean brownies may sound extremely unappealing, but believe me they are phenomenal. No one will even notice that they include black beans. You will trick the pickiest eaters. Black beans are packed with fiber and protein and there is so many health advantages to eating black beans on a regular basis.

If you want to get more beans into your family’s diet, try these brownies. You will see, these brownies are addictive and a great way to put fiber into a child’s dessert. They also take no time at all to make since you just throw everything in the food processor! So if you want a moist, chocolatey, delicious ,gluten free treat try this recipe. You won’t regret it, I promise. Trust me, black beans never tasted so good.

CHOCOLATE COVERED VEGETARIAN GLUTEN-FREE BLACK BEAN BROWNIES

Ingredients
  1. 6 oz canned black beans
  2. 2 oz toasted hazelnuts
  3. 2 egg
  4. 6 oz milk chocolate (if you need this dessert to be gluten free, please use some gluten free chocolate bar)
  5. 4 tbsp honey
  6. 4 tbsp coconut oil
  7. 4 tbsp cocoa
  8. 2 tsp instant coffee
Optional
  1. 1 oz melted white chocolate and 1 oz melted dark chocolate for drizzling or dust with 1 tbsp confectioners sugar.
Instructions
  1. Preheat the oven to 350°F.
  2. Line the 8×8 inch pan with parchment paper.
  3. Pour canned beans in a small bowl and cover with cold water.
  4. Let them stand for 30 minutes and then put the beans into a colander and rinse well under running water.
  5. This way you will eliminate salt for canned beans.
  6. Melt the chocolate in a microwave on Low power (100 Watts) for approximately 8-9 minutes, stirring every 30 seconds until melted.
  7. Place the hazelnuts into a food processor and pulse until the nuts are finely chopped.
  8. Add the eggs, well drained black beans, melted chocolate, honey, coconut oil , cocoa and coffee and pulse until smooth and creamy.
  9. Spoon the mixture into the prepared pan.
  10. Use a spatula to smooth out the top.
  11. Place on the middle shelf of the oven and bake for 25 minutes until risen and firm on top but still slightly gooey in the center.
  12. Leave to cool in the pan then turn out , remove the baking parchment and cut into 24 pieces.
Optional
  1. Drizzle brownies with melted white and dark chocolate or dust with confectioners sugar.
